Ingredients

  • 1 tablespoon high-grade, traditional Korean black miso (substitute doenjang if not available)
  • 1 tablespoon clarified butter, at room temperature
  • ½ teaspoon extra virgin black sesame oil
  • 2 teaspoons 10-year-aged Korean soy sauce

Method

Push the black miso through a fine sieve, then combine with the rest of the ingredients to form a smooth paste. Set aside.
