Wipe the mushrooms with a clean, slightly damp cloth, being careful not to tear the skin. Using your hands, remove the skins from the mushrooms. Reserve the mushroom flesh for another use.

Put the shiitake skins on a baking tray lined with silicone paper and brush with a light coating of clarified butter on both sides. Dry the shiitake skins under a heat lamp or in a 100°C (200°F/Gas ½) oven for 45 minutes or until dry and crisp. The butter lightly caramelises the skins as they are drying. Once dry and caramelised, remove the skins from the tray and allow to cool on a fresh sheet of silicone paper. Store in an airtight container until required.
