  • 1.5 kg (3 lb 5 oz) whole murray cod (or firm white-fleshed fish)
  • sea salt flakes
  • 100 g ( oz) clarified butter, melted


Scale and gut the Murray cod. Season both inside and out with sea salt flakes.

Brush the fish liberally with clarified butter. Wrap the fish in an envelope of silicone paper. Place in a fish kettle and steam over rapidly simmering water for 15–20 minutes or until just cooked through.
