Submerge the crabs in a large tub of iced water for 1 hour to help humanely dispatch them. Bring a large saucepan of salted water to the boil.
Add the crabs to the saucepan and boil for 8 minutes. Remove the crabs to a tray, transfer to the refrigerator and allow to chill for 1 hour.
Crack and remove as much white leg and body meat from the crabs as possible. Avoid any brown meat. Shred the crab meat with your fingers and place in a bowl. Refrigerate until required.
