  • 1 firm green mango
  • 150 ml (5 fl oz) white verjus

Method

Peel the green mango and cut into paper-thin slices using a Japanese mandolin. Place the slices and verjus into a cryovac bag and seal on a vacuum machine. Refrigerate for a minimum of 1 hour before using and for no longer than a few days.
