Ma Uon is a classical Thai snack. Authentically, cups are fashioned from banana leaves and the meat mixture is steamed therein. Small paper, stainless steel or Pyrex cups can be substituted. (Must be able to safely withstand steam.)

In a food processor, process the meats together until they have a smooth, even consistency. In a mortar, pound together the coriander roots, peppercorns and garlic to a juicy paste. Add the contents of the mortar to the processor along with palm sugar, fish sauce, coconut “Cream” and eggs, reserving 1 tablespoon of the egg mixture.
