Cut 1" off from both ends of the cucumbers or zucchini and discard the center section. Hollow out these ends with a sharp paring knife. Cut large V-shapes around the edge so the vegetable ends look like flowers or sepals, 4 or 5 “petals” to each.
Combine the vinegar, sugar, salt and water in a bowl and drop in the cucumber “flowers” to marinate for at least 10 minutes.
