Traditionally, in Thailand, Hae Koon are made with dried bean-curd sheets, softened with water, filled and steamed. I break with tradition because I prefer the convenience and texture of ready-made wrappers. Depending on the size of the completed roll, you may desire to use egg roll (largest), spring roll or Won-Ton (smallest) wrappers.
