The best known and loved of Thai soups, Dom Yam Gung, is a marvelous combination of tender shrimp floating in a rich broth, liberally spiced with chillies and tangy with lemon grass, lime juice and citrus leaves.

Ingredients

1 tablespoon vegetable oil

Method

Heat the oil in a saucepan and fry the shells until they turn pink. Add the chicken stock, salt, lemon grass, citrus leaves, lime rind and green chillies. Bring to a boil, cover, reduce heat and simmer for 20 minutes. Strain the mixture through a sieve, return the liquid to a saucepan and bring to a boil.
