This delicious, brawny beef soup with noodles is a standard (fare) in the smaller restaurants in Bangkok. Sen Mee, rice vermicelli noodles, can be substituted for the wide Gwaytio, fresh rice noodles. I prefer the rib-sticking qualities of the latter. If Sen Mee are used, they must be presoaked.

Heat the oil in a large saucepan over medium high heat and quickly brown the beef slices. Remove with a slotted spoon and set aside. In this same pan, while still on heat, fry the garlic until golden.
