Red curry paste may be bought in jars or packets in the larger Oriental markets but the homemade version is milder and more aromatic, using a fuller spectrum of spices. If you do not have an electric coffee grinder and a food processor or blender, prepare to spend more than an hour vigorously pummeling a pestle into a mortar with first the dry and then the moist ingredients to achieve a respectable paste (not an endorsement, merely a caveat).
