Ingredients

10 medium dried red chillies, seeded, soaked in warm water and finely chopped

Method

In a mortar, pound the chillies with the salt until they are completely pulverized. Add the red onion and continue pounding until it is macerated. Spoon in the shrimp paste and vinegar and pound until the resultant mixture is smooth and uniform.
