Because it is precooked, this curry paste is used mainly for flavorings, garnishes and as a component of sauces.

Ingredients

8 dried, red chillies, seeded

Method

Tear off a square of aluminum foil and place the chillies, shallots and garlic in it, wrapping tightly into a sealed package. Place the package directly on a stove burner set to medium low and cook for 2 minutes on either side, turning with tongs. Allow to cool, unwrap and transfer the contents to a mortar and pound to a paste, adding oil if necessary.
