A great favorite with the Thai, Prik King is a dry curry with a concentrated and piquant flavor. A scant two spoonfuls will flavor a heaped plate of rice. Although fish predominates, there is no noticeably fishy flavor.

Ingredients

4 stems lemon grass, finely chopped

Place all the Paste ingredients into a mortar or food processor and pound or grind into an even paste.

Curry
