Moo Wan is the traditional Thai equivalent of ham, although in recent years ham and sausages are produced commercially. Because of the paucity of refrigeration in the villages, the Thai prepare the sweet pork and reboil it daily. Refrigerated, it will keep for at least a week. The pork is sliced, cold, and used in fried rice and other stir-fried dishes. It can also be served in its own gravy, garnished with crisp-fried onions and eaten over plain rice.
