Flim-Flan Fish

Sampantamit means friendship in Thai, and this dish comes from a restaurant on the “Friendship Highway,” north out of Bangkok. The road is so named because it was built by American engineers and was the first major highway in the country.

In fun, I have called the dish “Flim-Flan” because it is an elaborate and delicious deception; a fake fish composed of layers of pounded fish stuffed with a mixture of pork, crab and chicken.
