Method

In a mortar or food processor, pound or grind together the chilli, garlic, onion and coriander to a juicy paste. Scrape the paste into a mixing bowl and stir in the turmeric, pepper, fish sauce, coconut milk and the beaten egg. Mix together thoroughly.
