In Thailand, fresh bamboo, cooked and shredded, is used for this dish. In the United States, we use canned bamboo shoots, which require no preparation.

Ingredients

2 shallots, finely chopped

Method

In a mortar, pound the shallots and garlic to a paste. Wrap the paste in a small packet of aluminum foil and place directly onto a burner or under a broiler. Broil on each side for 1 minute. Remove and place the paste in a mixing bowl. Add the bamboo shoots, fish sauce, lime juice, sugar, green onions and pork strips. Mix together gently. Line a plate with the lettuce leaves.
