This salad, Yam Gung, has quite a sharp, citrus flavor, plus the bite of ground red chillies. A mound of plain rice on the side of your plate is a nice way to balance the tartness.

Method

Place the cooked shrimp in a mixing bowl. Season with fish sauce, lime juice, garlic and powdered chilli. Mix well. Add the lemon grass, red onion, green onions and coriander leaves. Toss lightly and refrigerate. Chill a large platter. Rim it with alternating batches of lettuce leaves and lime slices. Sprinkle one half the mint leaves in the center.
