The Thai celery is a miniature cousin to our large, hearty bunches. To approximate the Thai celery, remove the large, outside stalks of domestic celery, and use only the heart including the young green leaves.

Place the pork, celery and onion in a bowl. Toss together with the lime juice and fish sauce. Stir in the sugar and toss again. Place the mixture on a platter and sprinkle with dried chilli flakes and onion flakes. Chill and serve.
