2 short cucumbers, peeled, halved and quartered, with the seeds scooped out so they resemble boats

Method

Using paper towels, mop the cucumber “boats” to remove any moisture. In a bowl, combine the garlic, mint, fish sauce, lime juice, sugar and pepper, stirring until sugar dissolves. Stir in the shredded beef and onion flakes. Spoon this mixture into the cucumber “boats” until they resemble fully loaded barges.
