Fresh oysters have a limited season in Thailand. The Thai incorporate them in this delicious and unusual salad. Oyster lovers may like to try it when tired of merely slipping the bivalves down their throats.

Ingredients

1 pound fresh oyster meat (Olympia, etc.)

Method

Wash the oyster meat thoroughly and drain well in a colander. In a mortar pound the salt, garlic and green chillies to a paste. In a bowl, blend this paste together with the oyster meat. Stir in the cucumber slices and onion. Season with vinegar and lime juice. Spoon the oyster mixture into the melon half, decorate with mint and red chilli slices. Chill and serve.
