Method

Heat the peanut oil in a small frying pan and fry the onion and garlic until crisp. Remove from heat. In a bowl, combine the garlic and onion with any remaining oil, together with the fish sauce, lime juice and sugar to form a dressing. Stir well until sugar dissolves.
