This basic Thai hot sauce is on the table at every meal. There are as many versions of Nam Prik as there are cooks to prepare it. Makeua Puong, the tiny pea eggplant, is often chopped and added as are some other miniature eggplant varieties. If not available, Makeua Puong may be omitted, but the sauce characteristically contains small fragments of chillies and other ingredients.
