This is the basic recipe. Other ingredients such as roasted peanuts and dried shrimp powder may be added. Nam Prik Pao commonly accompanies plain rice, cooked vegetables and salads. Try it spread on toast rounds for cocktail canapes. The traditional method of preparation calls for the garlic and onions to be roasted, unpeeled, in the hot ashes of a wood or charcoal fire until the skins are black.
