Lon are boiled sauces, as opposed to the uncooked sauces of Nam Prik. Boiled sauces are commonly served with fresh vegetables and small dried and fried fish of the herring family called pla too. This combination of vegetables, fish and sauce eaten with rice provides the basic meal of the Thai, eaten universally throughout Thailand.
