Place all the ingredients, except the oil, in a mixing bowl and thoroughly stir. Heat the greased pan over medium high heat until the oil just begins to vaporize. Pour in half the egg mixture and rotate the pan to coat the bottom evenly. Fry until the underside of the eggs are golden.
