A variation of the last recipe, Kluay Lae Kaopot Buat is a dessert for the adventurous to try. Some people cannot get used to the idea of corn incorporated into the dish, but to those used to Thai combinations of vegetables and fruit, this is delightful.

Place the banana chunks and corn in a medium saucepan. In a bowl, dissolve the palm sugar in the coconut milk. Add to the saucepan and stir in the salt. Bring to a boil, reduce heat and simmer for 2 minutes. Remove from heat and stir in the jasmine essence. Pour into a serving bowl, sprinkle with sesame seeds and refrigerate.
