These delicate, colored pancakes can be bought freshly made in the markets in Thailand. This is one of the few dishes in which sweetened, flaked coconut can be used. One of my Thai maids was almost addicted to these pancakes and always returned from the market with a big paper bagful. She preferred these to another, stickier version, in which the pancakes are made, unsweetened, and then consumed with copious quantities of sweetened condensed milk poured over them prior to rolling up. This r
