Kluay Tord Lad Nam Chuam is a sensational combination of ice-cold, crackled candy around a hot, moist banana. This recipe gives good results for a variety of fresh fruits including apples, oranges, peaches, etc. The cooking method is slightly complicated and requires the use of a candy thermometer unless you are an experienced candy-maker, as the sugar/water mixture must be very near, not above, 290°F.
