This syrup can be made using any citrus fruit - I particularly like using either limes, lemons, oranges or blood oranges. Citrus syrup is great to have on hand to serve with fruit or ice-cream or to give added intensity to a dessert using the same flavour.

Ingredients

  • 3 limes, lemons, oranges or blood oranges
  • 250 g castor sugar

Method

  1. Zest and juice the fruit.
  2. Bring the castor sugar and water to a boil in a saucepan and cook without stirring over a high heat until a pale caramel forms. Add the zest and juice and cook over a medium heat for a further 15 minutes until the mixture is syrupy.
  3. Pour the syrup into a stainless steel bowl to stop the cooking process. Allow it to cool compl
