These biscuits are made from the same dough as the Shortbread Pastry later in this chapter, but include lemon zest and juice. Other citrus peel such as orange, grapefruit or lime can be substituted to give a different flavour, as can minced candied ginger. An 8 cm pastry cutter will give you eighteen biscuits, while a 4 cm one will yield thirty-six.
