This recipe appeared in my first book, Paramount Cooking. It deserves prominence here because of its soft and sublime texture and its strong and clean taste. And it is a personal favourite - it is passionfruit, after all! As I have said many times, passionfruit is the ultimate fruit and I always feature it in some form on every Paramount menu.
