This dessert looks to our neighbours in South East Asia for its flavour and texture. Sago or tapioca is a common ingredient in Asian sweetmeats. This starch has the appearance of tiny white pearls; these soften but hold their shape with cooking, having no inherent flavour but acting as a textural carrier and thickening agent.
