Passionfruit curd is as indispensable to me as Lemon Curd, and as it keeps well refrigerated I always have it on hand. This means I can enjoy passionfruit’s intense taste of sunshine during the gloomiest times of the year! I recommend, however that you make these wonderfully simple tarts at the height of summer when both passionfruit and mangoes are at their best for a full-on tropical taste sensation.
