This is a celebration of sugar and spice and all things nice - a heady mix of tropical sweetness! A charlotte is a French term given to a moulded dessert that usually comprises sponge and jelly layers, a rich custard filling and fruit. In this instance, I have taken artistic licence and used the charlotte mould and the principle of its assembly but for a different effect. Choose the smaller sweet pineapple referred to as a ‘roughy’ for this dessert.
