Cassata originates from southern Italy or Sicily and should, by definition, consist of three different ice-creams, one layer including candied fruit and nuts. It is traditionally made in a basin or bombe mould and turned out to be cut into wedges.

Vanilla sugar is made by storing a vanilla bean in a jar of castor sugar - it’s a great way to re-use beans and the sugar picks up their flavour wonderfully.
