These delicate biscuits can accompany a dessert that includes coconut but they are also wonderful on their own with coffee. The mixture keeps refrigerated for a fortnight and you can bake the wafers as you need them. If you find it difficult to mould them into shape, there is nothing to say they can’t be served and eaten flat. The shape is a whim - it does not affect taste.
