Carrot Cake Muffins with Cream Cheese Filling

Make ahead, adding lots of grated carrot and warming spices, bake then eat on the go! These are packed full of goodness, but best of all is the cream cheese filling and swirl on top. This makes these muffins a little ‘special’ something, compared to a basic muffin. Feel free to double up the recipe to make a larger batch. For the best muffins, all you want is a wooden spoon – overmixing is the enemy of good muffins!
