Quick and easy enough for a work morning, this can be made ahead in a batch to scoop as and when needed, or you can scale it down for single servings (you’ll need to use a smaller baking dish and cook for a shorter time if so). The versatility of this bake is huge: sub your nut butter, add chocolate chips and other nuts and fruits for something that suits whatever you fancy! Once baked and cooled, you can portion up the oatmeal for a ready-to-go breakfast.
