Focaccia looks so impressive but actually isn’t too complex to make. It is super versatile so feel free to play with other toppings, such as basil and Parmesan, sun-dried tomato, or jalapeño and Cheddar! Making them as buns is fun and gives a great crust to sponge ratio, perfect for scooping up the remnants of a good pasta sauce or soup. I highly recommend fresh rosemary, but dried is fine if you can’t find any. Likewise, it’s worth using good quality extra-virgin olive oil.
