Spiced Ginger Traybake

The perfect nostalgic British bake. I think some people view ginger cake as a little old-fashioned, but I think it fits in fabulously well at an afternoon tea table, or gobbled up over the kitchen counter while having a chat with a friend (who, me? Guilty as charged). The glaze and the chopped stem ginger decor add a little more sweetness and spice, which gives it a bit of extra spark.
