Strawberry & Cream Puffs

This is an ode to my mum and a nod to a classic and a super simple recipe that feels called for when it’s too warm and sunny outside to be standing around in the kitchen. There is so much I could say about the happy memories I have connected to these little bakes! Simply put, these puffs consist of flaky pastry, jam and cream assembled in a sort of sandwich style: they are not at all fussy and can be pulled together with just basic ingredients.
