A light, crisp pastry encasing a rich chocolate ganache filling, topped with a hazelnut praline – this is a real showstopper. Don’t be afraid to work with the hot sugar; I go through it in easy steps! Feel free to use store-bought pastry if you prefer not to make your own.

Ingredients

Shortcrust pastry

Makes 320g/11¼oz

  • 100 g ( oz) cold butter, plus extra for greasing
  • 220 g<

Method

Start by making the pastry, if making your own. Put the butter and flour in a bowl and rub them together with your fingertips until the texture resembles breadcrumbs (alternatively, this can be done in a food processor). Add the water a little at a time until a dough forms. Shape into a ball, flatten slightly, wrap in cling film (plastic wrap) and chill in the fridge for 15 minutes.
