Make-ahead Choc-chip Cookie Ice Cream Sandwiches

Make a batch of chocolate cookie dough ahead of time, freeze it as a log, then this log will be waiting for you to cut slices off and bake, before filling with ice cream. This is great for late-night snacking without a whole lot of effort. Of course, you can also make them in one go! The cookies need to cool a bit before filling with ice cream. As it lasts a while, doubling up the cookie dough to keep in the freezer is highly recommended.
