This is sort of referring back to those almond croissants, but if I’m being totally honest I don’t know who has leftover croissants... Bread & butter pudding is a great way to use up slightly stale carbs, and I think almond croissants make a far more exciting pudding than your standard white bread!

Ingredients

  • 8 almond croissants
  • 4 medium eggs
  • tbsp granulated sugar

Method

Preheat the oven to 160°C fan (180°C/350°F/Gas 4).

Slice the almond croissants in half lengthways and place them in a buttered ovenproof baking dish, about 20 x 30cm (8 x 12in).

Whisk together the eggs and sugar in a large bowl and set aside.
