For many years, you picked the clear, plastic, bear-shaped honey bottle from the grocery store shelf and that was it. Now there is a delightful array of honeys on the market, each with its own nuances. Honey varieties range from mild to strong with many in between. While I love all types of honey slathered on my toast in the morning, I prefer the more mild floral honeys for baking. Light golden in color, acacia, clover, and star thistle honeys all go well with strawberries.
