I knew Australian pavlova was the equivalent to American apple pie when I saw it on the menu at a McDonald’s in Sydney. I like mine the way they serve them Down Under: crispy on the outside and a little chewy in the middle. Pavlovas are made of sugar and egg whites and tend to be on the sweet side, so be sure to use unsweetened coconut. It can be found in gourmet and health food stores. I also serve pavlovas with a citrus curd to cut down on the sweetness. Key lime curd works well—it has th
