A granita is an improved snow cone. The flavoring is mixed completely into the ice rather than just drizzled over the top. To create a vibrantly colored plum granita, I prefer Santa Rosa plums. The skins are pink-purple and the flesh is yellow with pink tinges. When cooked they turn a gorgeous bright pink. Other plum varieties will taste fine but may not have the same visual appeal. You can use this recipe as a base for any fruit-flavored granita; adjust the sugar according to taste. Serve
