Large, flat-bottomed coffee filters also work well as liners for prebaking tart and pie shells. Place the filter on top of the dough, making sure it is against the sides. Fill with dried beans or dried rice instead of pie weights, and then bake. Pie weights are more expensive.

To Make the Dough by Hand

Combine the flour, sugar, salt, and butter. Cut the vanilla bean in half lengthwise. Scrape out the seeds and add them to the flour mixture; reserve the bean for another use. Using 2 knives or a pastry blender, mix together until the butter is pea sized. Pour the ice-cold water into the flour and mix just until the dough comes toge
